Rooted in more than five generations of family winegrowing in Morey-Saint-Denis, Domaine Didier Amiot was established in 2019 by Didier and his wife Hélène following the division of the family estate. Domaine de Montille — Burgundy

With origins dating back to around 1730, Domaine de Montille’s modern history began in 1947 with Hubert de Montille. His son Étienne later expanded the estate’s holdings across the Côte d’Or, embracing organic farming and biodynamics while preserving the elegance, vineyard expression and ageing potential associated with the domaine.

Racines — California

Racines brings together Étienne de Montille and Brian Sieve of Burgundy with Rodolphe Péters of Champagne. Based in California’s cool, ocean-influenced Sta. Rita Hills, the collaboration produces Chardonnay, Pinot Noir and traditional-method sparkling wines, seeking purity, balance and a clear expression of place.

de Montille & Hokkaido — Japan

Launched by Étienne de Montille in 2016, this project brings together French and Japanese teams to explore Hokkaido’s winemaking potential. Early vintages used grapes from growers in Yoichi, while planting began in Hakodate in 2019. The winery was completed in 2023, alongside the first estate harvest.

Domaine Jean Chartron
Founded in 1859 by cooper Jean-Edouard Dupard, Domaine Jean Chartron has been passed down through five generations of the same family. A historic landowner in Puligny-Montrachet, the estate has held some of its vineyards for more than a century, including the prestigious Clos de la Pucelle, Clos du Cailleret and Chevalier-Montrachet Clos des Chevaliers.

Today, Jean-Michel and Anne-Laure Chartron oversee 14.5 hectares across 23 appellations in Puligny-Montrachet and neighbouring villages. 🏛️ About the Producers

- Waris et Filles is a small grower Champagne house based in Avize, in the heart of the Côte des Blancs. As a récoltant manipulant, the estate grows, vinifies, and bottles its own wines, offering an artisanal, terroir driven alternative to the larger négociant houses.

- Bodegas Trenza is a collaborative project from the Jumilla region in southeastern Spain. The Mont Clou Chardonnay Sur Lie is fermented and aged on its fine lees, delivering roundness, texture, and a subtle mineral undertone.

- La Sala is an estate in the Chianti Classico zone producing wines exclusively from its own vineyards. The Gran Selezione classification represents the highest tier of Chianti Classico, requiring a minimum of 30 months ageing and production solely from estate grown grapes.

- Massimago is a historic estate in the Valpolicella region near Verona, known for a modern, fresh approach to traditional Veneto winemaking. The 'Conte Gastone' Amarone is crafted from carefully dried grapes in a style that favours elegance and purity of fruit over sheer weight.

- Yardley Brothers is a Hong Kong based craft brewery founded in 2013, known for inventive, flavour forward beers that draw on both local ingredients and global brewing traditions.

- Tin Shing is a Hong Kong based artisan producer specialising in handcrafted plum wines. The new release being previewed at this dinner has not yet been made available to the public, making this evening its first public debut.

Chappellet, Founded in 1967 by Donn and Molly Chappellet on the steep, volcanic slopes of Pritchard Hill, high above the Napa Valley floor. While contemporaries planted on the valley floor, Chappellet chose altitude and rugged terrain. In six decades has helped establish Pritchard Hill as one of California's grands crus. Known for intense, structured Cabernet Sauvignon with exceptional longevity, the estate is now guided by the second generation with a focus on sustainable farming.

🏡 Featured Producers:

Domaine Jérémy Arnaud — A young vigneron based in Viviers who established his namesake domaine in 2016, choosing to build his own legacy rather than wait to inherit the family estate. From just over three hectares of fragmented parcels across Chablis, Tonnerre, and Épineuil, he crafts precise, mineral-driven whites rooted in Kimmeridgian limestone. Hand-harvested, spontaneously fermented with indigenous yeasts, and aged with restrained oak, his wines are pure expressions of terroir — energetic, authentic, and part of a new wave redefining modern Chablis.

Bachelet-Monnot — Brothers Marc and Alexandre Bachelet established their domaine in 2005 in Dezize-lès-Maranges, drawing on generations of Burgundian winemaking heritage. The estate spans 20 hectares across some 20 appellations in the Côte de Beaune, from Bourgogne to Grand Cru (Bienvenues-Bâtard-Montrachet, Bâtard-Montrachet). Farmed with intentionally low yields and manual harvesting, the grapes are long-pressed, fermented with indigenous yeasts in 350L barrels, and aged patiently before release. The resulting wines are layered, lifted, and textured — among the most compelling in the Côte d'Or today.

Starward — A Melbourne-born whisky distillery ageing spirits in Australian red wine barrels. Bold, fruity, and unapologetically modern.

Champagne Laurent Lequart is a family-owned grower-producer (récoltant) based in Passy-Grigny, in the heart of the Marne Valley.

🍇 The Producers

Champagne Odyssée 319 — An ambitious project by Olivier Bonville (of Champagne Franck Bonville) and his son-in-law Ferdinand Ruelle, based in Avize in the Côte des Blancs. Their ultimate goal: to craft a unique cuvée from each of Champagne's 319 villages. The core range showcases the chalky tension and mineral freshness of Grand Cru Avize Chardonnay, while their limited-edition "Jour" series journeys across the region, partnering with passionate winegrowers to reveal the diversity of Champagne's terroirs one village at a time.

Jean-Luc Burguet — Stepping out of the legendary shadow of their father Alain, who built the domaine from scratch in Gevrey-Chambertin starting in the 1970s, Jean-Luc now leads this 9.5-hectare estate with a strict focus on biodynamic farming, organic practices, and minimal intervention. Harvesting later than most neighbours for full phenolic maturity, 100% destemming, indigenous yeast fermentation, and no fining or filtration. The wines preserve the raw power and deep, old-vine concentration of classic Gevrey while delivering modern elegance and silky purity.

🏛️ The Winery

A multi-generational estate rooted in the Langhe since the 1920s. Celso Abbona was among the first to champion the potential of Dogliani and its most prized grape, Dolcetto, planting the historic Doriolo vineyard that still produces the family's flagship wine today.

In the 1980s, his sons Marziano and Enrico expanded into the Barolo hills, hand-selecting parcels in Monforte d'Alba and Novello, including the now-renowned crus of Ravera, Pressenda, and Bricco Barone.

The estate now spans 52 hectares and is run by Marziano and his daughters, producing wines of precision and restraint: sustainability-driven viticulture, reduced treatments, hand harvesting, and deep respect for terroir.

Papà Celso Dogliani DOCG, their flagship Dolcetto from 60+ year-old vines, is widely considered one of the finest expressions of the grape in existence.
