This two day intensive course, delivered in partnership with the Bureau Interprofessionnel des Vins de Bourgogne (BIVB), offers a structured journey through one of the world's most revered and complex wine regions. Led by BIVB Certified Lecturer Mr Louis Lee, students will explore 84 appellations across 44 villages, from the crisp Chardonnays of Chablis to the legendary Pinot Noirs of Côte de Nuits.
Whether you are a newcomer to Burgundy or a seasoned enthusiast looking to deepen your understanding, this course covers the essentials: terroir, grape varieties, the four tier classification system, regional wine styles, and the villages and vineyards that make Bourgogne the ultimate destination for wine lovers. Upon completion, students sit a one hour examination to earn the Bourgogne Wine Certificate.

Domaine Jean Chartron
Founded in 1859 by cooper Jean-Edouard Dupard, Domaine Jean Chartron has been passed down through five generations of the same family. A historic landowner in Puligny-Montrachet, the estate has held some of its vineyards for more than a century, including the prestigious Clos de la Pucelle, Clos du Cailleret and Chevalier-Montrachet Clos des Chevaliers.
Today, Jean-Michel and Anne-Laure Chartron oversee 14.5 hectares across 23 appellations in Puligny-Montrachet and neighbouring villages. Based in Koriyama, Fukushima Prefecture, Asaka Distillery is operated by Sasanokawa Shuzo, a historic sake producer whose whisky-making roots date back to 1946. Whisky distillation restarted under the Asaka name in 2016, bringing a new chapter to that heritage. Founded in 1844 by Dr Christopher Rawson Penfold and his wife Mary at Magill Estate near Adelaide, Penfolds began by producing medicinal tonic wines. Its defining chapter came in 1951, when Max Schubert created the first experimental Grange, inspired by Bordeaux’s age-worthy reds. Despite management’s initial rejection, he later continued production in secret, laying the foundations for an Australian wine icon. With origins dating back to around 1730, Domaine de Montille’s modern history began in 1947 with Hubert de Montille. Racines — California

Launched by Étienne de Montille in 2016, this project brings together French and Japanese teams to explore Hokkaido’s winemaking potential. 🏛️ About Maison A&S
Founded in 2018 by longtime friends Pierre-Alexandre Soltana and Alexandre Aires, Maison A&S began as a small-scale Burgundy négociant project, with the duo overseeing everything from grape sourcing to maturation.
Their first three vintages were crafted in a rented 17th-century vaulted cellar in Chagny. In 2021, they acquired a winery and vineyard plots around Nantoux and Pommard, developing their project around Pinot Noir, Chardonnay and Aligoté.

Domaine de Montille — Burgundy
With origins dating back to around 1730, Domaine de Montille’s modern history began in 1947, when a 17-year-old Hubert de Montille started making the family’s wines. His son Étienne later expanded the estate’s holdings across the Côte d’Or, including the acquisition of Château de Puligny-Montrachet in 2012. Organic farming from 1995 and a transition to biodynamics in 2005 helped shape his approach: wines that are more approachable in youth while retaining the elegance, vineyard expression and ageing potential associated with the domaine.
Racines — California
Racines brings together Étienne de Montille and Brian Sieve of Burgundy with Rodolphe Péters of Champagne. Based in California’s cool, ocean-influenced Sta. Rita Hills, the collaboration produces Chardonnay, Pinot Noir and traditional-method sparkling wines. Combining Burgundian and Champagne expertise with Californian vineyards, the team seeks purity, balance and a clear expression of place.
de Montille & Hokkaido — Japan
Launched by Étienne de Montille in 2016, this project explores Hokkaido’s potential for Chardonnay and Pinot Noir through collaboration between French and Japanese teams. Early vintages used grapes from growers in Yoichi, while planting began in Hakodate in 2019. The winery was completed in 2023, alongside the first estate harvest. The evening’s Bellevue Chardonnay offers an introduction to this Japanese chapter of the de Montille story.

Ruggeri — Veneto
Founded in 1950 by Giustino Bisol and his cousin Luciano Ruggeri, this Valdobbiadene producer combines generations of local winemaking knowledge with an innovative approach to Prosecco. Long-standing relationships with growers and patient maturation are central to its philosophy, exploring the depth and ageing potential of the region’s sparkling wines. Giustino B., named in tribute to the founder, captures this pursuit of finesse and complexity.
Cadgal — Piedmont
Cadgal explores both the freshness and the ageing potential of Piedmont’s wines, with a particular focus on Moscato. Its old-vine bottling undergoes an unusual maturation process: bottles rest in sand-filled crates for five years, allowing greater complexity to develop. Alongside these aromatic sweet wines, Cadgal also produces dry whites, including Chardonnay—offering two contrasting sides of the producer in the evening’s selection.
Bruno Rocca — Piedmont
The Rocca family’s roots in Barbaresco stretch back to the nineteenth century, with the purchase of vineyards in Rabajà in 1958 marking a defining chapter. Bruno began bottling under the family name with the 1978 harvest, shifting the focus towards wines that express their individual vineyard origins. This commitment to place remains central to the estate, whose holdings include Currà in Neive, featured in the evening’s lineup.
Elio Altare — Piedmont
Based in La Morra, the Altare family estate combines its Piedmontese roots with an openness to experimentation. Inspired by his travels to Burgundy, Elio introduced changes in both vineyard and cellar, pursuing elegance, finesse and balance. La Villa reflects that approach: a blend of Barbera and Nebbiolo aged in French barriques, bringing together vibrant acidity, dark fruit and carefully balanced tannins.
Romano Dal Forno — Veneto
Producing wine since 1983, Romano Dal Forno’s estate in the Illasi Valley combines traditional local grape varieties with meticulous vineyard work and modern cellar techniques. Its focus on Valpolicella and Amarone reflects a determination to bring precision and depth to the region’s wines. Careful fruit selection and a willingness to innovate underpin an approach that respects tradition without being limited by it.
San Filippo — Tuscany
Set just outside Montalcino, San Filippo surrounds a historic Tuscan hamlet whose main farmhouse dates to 1672. Its Le Lucere Brunello comes from an east-facing vineyard and is made entirely from Sangiovese, with maturation in smaller oak vessels followed by larger casks. The estate’s emphasis on finesse, structure and silky tannins offers a distinctly Tuscan chapter in the evening’s journey across Italy.

A family-owned boutique estate in Rapaura, Marlborough, Riverby Estate occupies land farmed by descendants of the Matthews family for more than a century, with its first vines planted in 1989. Named after the Opawa River, the estate honours its riverside heritage with a rainbow trout on its labels.
Sustainable vineyard practices include using sheep for natural grass and weed control, while winemaking by Dr. John Forrest centres on fruit quality, with vintages skipped when grapes fall below the estate’s standards. Based in Fleury-la-Rivière, this fourth-generation winegrowing family farms a four-hectare estate, predominantly planted with Pinot Meunier alongside Chardonnay and Pinot Noir. Thibault Legrand returned in 2017, introducing biodynamic principles, with certification achieved in 2019.
His father Patrice’s passion for fossils inspired more than two decades of excavation to create an underground fossil cellar. Thibault carries that fascination into his wines, bringing together plots with matching geological soils and using native-yeast fermentation without fining or filtration.

With a family winegrowing history dating back to 1590, Domaine Seguinot Bordet is one of Chablis’s oldest family-run estates. Based in Maligny, just north of Chablis, the domaine encompasses 16 hectares of vineyards on the right bank of the River Serein, predominantly facing southeast and including vines more than a century old. Under Jean-François Bordet, the estate continues its tradition of unoaked Chardonnay. Distinctive horizontal fermentation tanks increase contact between the wine and its lees during maturation, bringing subtle richness and complexity without bâtonnage, or lees stirring.

Based in Gétigné, Jérôme Bretaudeau began building Domaine de Bellevue from his family’s small vineyard holdings, becoming a full-time independent grower in 2005. His estate achieved organic certification in 2012, followed by biodynamic certification in 2020. Alongside Muscadet’s signature grape, Melon de Bourgogne, he grows less expected varieties such as Chardonnay, Savagnin and Merlot. Experimentation with grape varieties, ageing vessels and maturation times gives his domaine a distinctive identity that reaches well beyond traditional Muscadet.

Located in Parnay, Château Yvonne has been led by Mathieu Vallée since 2007. A winemaker’s son who left engineering for the vineyard, Vallée has shaped an estate centred on Chenin Blanc and Cabernet Franc, grown on the region’s limestone soils. Organic farming has been practised since 1997, with biodiversity and careful soil management central to its approach. In the cellar, native yeasts, long ageing and minimal sulphur additions reflect a philosophy of limited intervention, allowing the vineyards and each vintage to define the wines.
Starward | Melbourne, Australia
Founded by David Vitale in 2007, Starward set out to make an approachable whisky with a distinctly Australian identity. Its use of local wine barrels and Melbourne’s fluctuating temperatures plays a central role in maturation, while the city’s food culture inspires whiskies intended for sharing around the table. Although best known for its red-wine-cask expressions, Solera, featured in this evening’s highball, matures in Australian Apera fortified-wine barrels, developing notes of caramel, crème brûlée, dried fruit and spice.

Champagne Drappier — Urville, Champagne, France
Founded in 1808, Drappier is a family Champagne house rooted in Urville, where Pinot Noir plays a central role in its identity. In the 1930s, Georges Collot, Michel Drappier’s maternal grandfather, championed the grape’s replanting locally, a decision that helped shape the house’s future. Its vineyards lie over Kimmeridgian limestone, a geological formation also found in Chablis, while historic cellars acquired by the family after the Second World War hold its treasured vintages and large-format bottles.
Domaine de Bila-Haut — Roussillon, France
Domaine de Bila-Haut represents Michel Chapoutier’s exploration of Roussillon, beginning in Latour de France. Drawn to the region’s rocky terraces and varied geology, he developed wines intended to express the character of individual sites.
The estate’s V.I.T. emerged after six years of observation and study, while its exploration later extended to Lesquerde and single-vineyard selections such as Chrysopée. Together, these wines reflect Chapoutier’s focus on the relationship between landscape, soil and the character of the finished wine.

Domaine Jean-Marc Millot | Burgundy, France
Growing grapes and bottling his own wines since 1992, Jean-Marc Millot established a domaine based in Nuits-Saint-Georges, with holdings including Échezeaux, Grands Échezeaux, Clos de Vougeot and Vosne-Romanée Les Suchots.
His daughter Alix joined in 2014, taking responsibility for vineyard management and winemaking. Organically farmed old vines, slow fermentation in a cool cellar and 12–16 months of ageing produce wines combining fruit purity with depth and complexity. Chateau Montelena | Calistoga, Napa Valley
Established in 1882, Chateau Montelena achieved international recognition when its 1973 Chardonnay won the white-wine tasting at the 1976 Judgment of Paris. Beyond that celebrated achievement, its Estate Zinfandel reflects a commitment to this historic Californian grape, combining richness with freshness and complexity. The 1994, 2007 and 2010 vintages invite a closer look at this less widely known part of the estate’s portfolio.
Vieux-Os | Napa Valley
Vieux-Os is a label associated with Schrader Cellars, with old-vine, vineyard-designated Zinfandels forming part of its portfolio. Here, the Black Sears and Tofanelli bottlings offer a focused comparison: two vineyards, the same grape and the same 2010 vintage. It is an opportunity to explore vineyard differences alongside the influence of bottle age.
Rochioli | Russian River Valley
Rochioli’s roots lie in generations of family farming in the Russian River Valley. Joe Rochioli Jr. began planting Pinot Noir in 1968, while his son Tom later developed a winemaking approach inspired by Burgundy, keeping individual vineyard lots separate to highlight their distinctive character. Against that Pinot Noir-led history, the 1999 Zinfandel offers a different perspective on the family’s winemaking heritage.


The evening showcases the full range of Giovanni Corino's Piedmontese craft, from youthful Barbera and Nebbiolo all the way to two outstanding Barolos, including a supremely elegant Riserva 2013 with over a decade of age.
Expect convention-breaking pairings: red wine with seafood, an elegant red alongside Crème Brûlée and lobster bisque, and a show-stopping Yuzu liqueur finale.

🏛️ About the Producer
A small, family-run estate on the hamlet of Annunziata in La Morra, nestled between the Arborina and Giachini vineyards. The Corino family began as sharecroppers in 1952 and bottled their first Barolo in the mid-1980s.
Today the winery cultivates 9 hectares, producing around 50,000 bottles a year in a modern-classicist style shaped by sustainable farming and a relentless drive to express La Morra's terroir.

🏛️ The Winery
Founded in 1956 in the western hills of Chianti Classico, Isole e Olena was transformed by Paolo De Marchi, who took over from his father in 1976. In 1980 he created Cepparello, a 100% Sangiovese aged in French barrique that became one of the original Super Tuscans.
The estate's 56 hectares sit at 350–450 metres on galestro and schist soils. In 2022, it was acquired by EPI (owners of Biondi-Santi and Charles Heidsieck). Beyond Cepparello, the estate produces Chianti Classico, single-varietal wines, and an acclaimed Vin Santo aged over a decade in small caratelli.

🏛️ Spotlight on Henri Giraud
The Giraud-Hémart family has grown vines in Aÿ for 13 generations, with roots stretching back to 1625, and began producing wines under its own name in the 1950s. Henri Giraud combines this heritage with an experimental approach to winemaking, placing particular importance on oak from the Argonne forest. Carefully selected wood and individually tailored barrel toasting help shape the house’s distinctive style, while its commitment to forest restoration reflects a long-term vision extending far beyond the cellar.


This dinner at Mondrian Hong Kong welcomes Donnafugata, the visionary family owned Sicilian producer, for an evening that traces a journey across the island, from the volcanic slopes of Mount Etna to the wind swept island of Pantelleria. Each course is crafted by Carna's kitchen to complement the distinctive character of each wine.

🏛️ Spotlight on Donnafugata
Donnafugata is a family winery with over 170 years of winemaking heritage in Sicily. Founded in 1983 by Giacomo Rallo and his wife Gabriella, though the family has been in the wine business since 1851, Donnafugata is credited with revolutionising Sicilian wine, proving the island could produce fresh, elegant, age worthy wines.
Now led by the fifth generation, José and Antonio Rallo, the estate spans 410 hectares across four remarkable sites: the hills of Contessa Entellina, the plains of Vittoria, the volcanic slopes of Etna, and the wind swept island of Pantelleria. The name "Donnafugata," meaning "the woman who fled," refers to Queen Maria Carolina of Naples, who took refuge in Sicily to escape Napoleon's forces.

Tenute San Fabiano is a historic Tuscan estate owned by the noble Borghini Baldovinetti de' Bacci family, with roots dating back to 1452. 🏛️ About the MICHELIN Grape Selection
In July 2026, the MICHELIN Guide launched its inaugural Grape Selection in Burgundy, introducing a 1-to-3 "Grapes" rating system that evaluates entire wine estates rather than individual bottles or vintages. Of the approximately 3,500 producers across Burgundy, only 94 were recognised in the debut release, roughly 2.7% of the region's domaines covering the Côte de Nuits, Côte de Beaune, and Côte Chalonnaise.
Nine estates received the highest distinction of three grapes, the equivalent of three Michelin stars for restaurants. The evaluation criteria assess overall estate excellence based on agronomy and viticulture, winemaking technical mastery, identity, balance, and vintage-over-vintage consistency, focusing strictly on producer practices and terroir expression, independent of hospitality infrastructure.

🏛️ About Chateau Musar
Founded in 1930 by Gaston Hochar in Lebanon's Bekaa Valley, Chateau Musar is one of the most singular estates in the wine world. Inspired by Bordeaux yet entirely its own, the winery rose to international acclaim under Gaston's son Serge, who continued making wine throughout the Lebanese Civil War and famously introduced Musar at the 1979 Bristol Wine Fair. Michael Broadbent championed the wines, calling them "the greatest wine in the world that nobody's ever heard of," and in 1984 Serge became Decanter's first-ever Man of the Year.
The estate farms organically at elevations of 900 to 1,200 metres, working with Cabernet Sauvignon, Cinsault, Carignan and indigenous varieties like Obaideh and Merwah. Winemaking is minimal-intervention with indigenous yeast fermentation, and the flagship red is typically held for seven years before release. Still family-owned after more than ninety years, Chateau Musar remains Lebanon's most celebrated winery and proof that great wine is defined not by geography but by vision and conviction.

🏛️ About the Producer
Founded in 1949, Domaine Jacques Selosse was transformed in the 1980s when Anselme Selosse, trained at Burgundy's finest domaines including Coche-Dury, Leflaive and Comte Lafon, took over and brought a radical terroir-first philosophy to Champagne.
He introduced oak barrel fermentation, solera ageing, natural yeasts, biodynamic farming, and single-vineyard expression to a region built on blending and volume. Twice named "Vigneron de l'Année," Anselme is widely regarded as the godfather of Grower Champagne.
The estate farms just 8 hectares across 54 plots in Avize, Cramant, Oger, Le Mesnil-sur-Oger, Aÿ, Ambonnay and Mareuil-sur-Aÿ, producing only ~55,000 bottles annually. The Lieux-Dits collection, introduced in 2010, represents six single-vineyard cuvées showcasing each village's distinct terroir. Today, Guillaume Selosse continues his father's legacy, refining rather than reinventing.
