🏛️ About Jacques Selosse
Jacques Selosse is a legendary, family-run Champagne house based in Avize, in the heart of the Côte des Blancs. Founded in 1949, the estate was transformed by Anselme Selosse when he took over in 1980, pioneering the grower-Champagne revolution and inspiring an entire generation of vignerons.Today, his son Guillaume continues the legacy.
The domaine farms close to 8 hectares of mostly Grand Cru Chardonnay, with small plots of Pinot Noir, producing a mere 58,000 bottles per year. The winemaking philosophy is resolutely Burgundian with fermentation and ageing in small oak barrels, a solera system for reserve wines, and a categorical rejection of malolactic fermentation to preserve natural crispness and tension.In the vineyards, the approach is rooted in permaculture, prioritising soil health and microorganisms over intervention. The result: rich, oxidative, terroir-driven Champagnes that redefined what the region is capable of.

One of Israel's most recognized wineries, Jerusalem Winery produces acclaimed wines from the Judean Hills, a region surrounding the holy city where viticulture dates back thousands of years. Their Jerusalem Hills range showcases the elegant, structured style of high-altitude Judean vineyards, blending Bordeaux varieties with warm Mediterranean sun and cool-climate finesse at elevation.
⛰️ Hevron Heights Winery (Israel)
Founded in 2000 near Hebron by French-Moroccan winemaker Michel Murciano, Hevron Heights is a boutique winery quietly producing some of Israel's finest wines at nearly 1,000 meters elevation. Murciano brings old-world French sensibility to ancient Judean terroir, aging wines extensively in French oak. The winery follows strict kosher and sacred agricultural laws, including Shmita (resting the soil every seventh year), while crafting powerful, cellar-worthy reds that have caught the attention of critics like Jancis Robinson.


Eight courses of refined Shanghainese cuisine paired with six drinks spanning vintage Champagne, Spanish Chardonnay, Chianti Classico Gran Selezione, Amarone della Valpolicella, a local craft sour, and an exclusive pre-release plum wine.

🏛️ About the Producers
- Waris et Filles is a small grower Champagne house based in Avize, in the heart of the Côte des Blancs. As a récoltant manipulant, the estate grows, vinifies, and bottles its own wines, offering an artisanal, terroir driven alternative to the larger négociant houses.
- Bodegas Trenza is a collaborative project from the Jumilla region in southeastern Spain. The Mont Clou Chardonnay Sur Lie is fermented and aged on its fine lees, delivering roundness, texture, and a subtle mineral undertone.
- La Sala is an estate in the Chianti Classico zone producing wines exclusively from its own vineyards. The Gran Selezione classification represents the highest tier of Chianti Classico, requiring a minimum of 30 months ageing and production solely from estate grown grapes.
- Massimago is a historic estate in the Valpolicella region near Verona, known for a modern, fresh approach to traditional Veneto winemaking. The 'Conte Gastone' Amarone is crafted from carefully dried grapes in a style that favours elegance and purity of fruit over sheer weight.
- Yardley Brothers is a Hong Kong based craft brewery founded in 2013, known for inventive, flavour forward beers that draw on both local ingredients and global brewing traditions.
- Tin Shing is a Hong Kong based artisan producer specialising in handcrafted plum wines. The new release being previewed at this dinner has not yet been made available to the public, making this evening its first public debut.

🏡 Featured Producers:
Domaine Jérémy Arnaud — A young vigneron based in Viviers who established his namesake domaine in 2016, choosing to build his own legacy rather than wait to inherit the family estate. From just over three hectares of fragmented parcels across Chablis, Tonnerre, and Épineuil, he crafts precise, mineral-driven whites rooted in Kimmeridgian limestone. Hand-harvested, spontaneously fermented with indigenous yeasts, and aged with restrained oak, his wines are pure expressions of terroir — energetic, authentic, and part of a new wave redefining modern Chablis.
Bachelet-Monnot — Brothers Marc and Alexandre Bachelet established their domaine in 2005 in Dezize-lès-Maranges, drawing on generations of Burgundian winemaking heritage. The estate spans 20 hectares across some 20 appellations in the Côte de Beaune, from Bourgogne to Grand Cru (Bienvenues-Bâtard-Montrachet, Bâtard-Montrachet). Farmed with intentionally low yields and manual harvesting, the grapes are long-pressed, fermented with indigenous yeasts in 350L barrels, and aged patiently before release. The resulting wines are layered, lifted, and textured — among the most compelling in the Côte d'Or today.
Starward — A Melbourne-born whisky distillery ageing spirits in Australian red wine barrels. Bold, fruity, and unapologetically modern.
