🏛️ Spotlight on Château de Meursault
Château de Meursault is one of Burgundy's most recognisable landmarks. A historic estate at the heart of the village with roots stretching back centuries. The château sits above some of the Côte de Beaune's finest terroir, with holdings across prestigious appellations in both white and red. Its cellars, carved into the limestone beneath the property, house hundreds of thousands of bottles aging quietly in the dark.
Since the Halley family acquired the estate in 2012, winemaking has been led by Stéphane Follin-Arbelet, who brings a meticulous, terroir-driven approach to every cuvée. Under his stewardship, the estate continues to produce wines that balance tradition with precision. Textbook expressions of place from one of the world's most revered wine regions.

Plantin Kaviari
One of France's most respected caviar maisons, distributed in Hong Kong by Gourmet en Provence. Renowned for sourcing exceptional caviars from sustainable sturgeon farms, Kaviari supplies many of France's finest Michelin-starred restaurants. Each variety, Baeri, Oscietre Prestige, and Kristal, offers a distinct profile, from buttery and nutty to briny and mineral.
Paul Launois
A small, family-owned grower Champagne house based in Le Mesnil-sur-Oger, widely regarded as the holy grail for Blanc de Blancs production. Winemaker Julien Launois farms 6.5 hectares across 19 plots of Grand Cru terroir, having recently broken free from co-operative ties to produce an artistically crafted, entrepreneurial range under the Paul Launois label. His Champagnes are precise, chalky, and unmistakably Le Mesnil.
Sylvain Langoureau
A fifth-generation family estate of 9 to 10 hectares based in the hamlet of Gamay in Saint-Aubin, nestled between Puligny-Montrachet, Chassagne-Montrachet, and Meursault. Run by Sylvain and Nathalie Langoureau since 1989, the domaine farms sustainably, ferments exclusively with indigenous yeasts, and uses minimal new oak to let the natural fruit and site-specific minerality shine through with purity and precision.
Modot Guyon
A historic Chambolle-Musigny estate dating back to 1820, revived in 2023 by sixth-generation winemaker Adrien Guyon after a 19-year hiatus. Drawing on old vines aged 60 to 80 years, Adrien, trained at elite domaines such as Domaine de la Vougeraie, crafts unfined, unfiltered wines with heavy whole-cluster fermentation, producing structured, perfumed reds of remarkable depth and aromatic intensity.

Bellingham was founded in 1693 in Franschhoek, making it one of the oldest wine estates in South Africa. The winery is celebrated as the pioneer of both Pinotage and Chenin Blanc in the Cape, with its Bernard Series representing the pinnacle of old-vine winemaking, sourcing from bush vines. The Founders Series POD is a limited-release blend honouring the estate's heritage, showcasing the finest parcels from a single vintage.
Newton Johnson Family Vineyards is based in the Hemel-en-Aarde Valley of Walker Bay, one of the coolest wine-growing regions in South Africa. 🏛️ Two Iconic Wineries
Sadie Family · Swartland, South Africa
Founded in 1999 by Eben Sadie, widely regarded as one of the greatest winemakers in the southern hemisphere. His obsession with old vines and terroir helped put the Swartland on the world wine map. Columella, his Syrah-based flagship from granite, slate, and sandstone soils, debuted in 2000 and remains one of the country's most celebrated wines. Palladius, its white counterpart, is a Chenin Blanc-based blend from 13 parcels, fermented in clay amphora and concrete eggs. The Old Vine Series showcases single-vineyard expressions including Soldaat (high-elevation Grenache from Piekenierskloof) and Rotsbank (Chenin Blanc of remarkable purity). All wines biodynamically produced, hand-sorted, moved by gravity.
Restless River · Hemel-en-Aarde Valley
Craig Wessels crafts elegant, site-specific wines that reflect the purity and character of their origin. Le Luc Pinot Noir, from one of the coolest corners of the valley, is among the most sought-after Pinots in South Africa.


Noguchi Naohiko is known as "the god of sake brewing," a toji who has devoted over 70 years to making sake with one simple desire: to make good sake and make people happy.
This dinner at Sha Tin 18 is a rare chance to explore the institute's yamahai lineup across different vintages, each made with a different rice variety, all muroka nama genshu (unfiltered, unpasteurised, undiluted).
The menu is classic Cantonese banquet-style, served communally for 24 guests only. From crispy roasted pork belly to Peking duck to flambé char siu, each course rises to meet these powerful, layered sakes.

🏛️ About Noguchi Naohiko Sake Institute 農口尚彦研究所
Hailed as "the god of sake brewing," Mr. Naohiko Noguchi began his career as a toji at the age of 28 and has been brewing for over 70 years. He is a key figure in the revival of the nearly lost yamahai brewing method and is regarded as one of the "Four Guardians of Heaven" by the Noto Toji Guild. In 2017, he founded his namesake institute in the mountain village of Kanagaso, Ishikawa Prefecture, with the vision of passing his skills, spirit, and philosophy to a new generation. Today, the institute is led by Mr. Takashi Iwai, who began working in sake at the age of 24 and serves as the right hand of the master.
