Maison Edouard Delaunay was founded in 1893 in Nuits-Saint-Georges and quickly built a reputation as one of Burgundy's most respected négociants, counting Romanée-Conti and Liger-Belair among its partners by the 1930s. After a century of activity the house fell into neglect before being brought back into family hands by Laurent Delaunay in 2016. The first vintage under the revival was 2017 and the wines have since earned widespread acclaim. Rooted in the Côte de Nuits and Côte de Beaune, the house is known for precise, terroir driven selections from village level through to Grand Cru, with a particular affinity for its home village of Nuits-Saint-Georges.


When pristine water from one of Japan's clearest rivers meets century-old brewing craftsmanship, the result is the layered, delicate "Niyodo-gawa" series.
Led by Kochi Syuzo's brand ambassador, this afternoon session takes you through seven expressions, from Junmai Daiginjo to yuzu and buntan liqueurs, paired with four everyday Chinese dishes.

Kochi Syuzo is a heritage brewery from Kochi Prefecture, home to the Niyodo River, known as Japan's "Miracle Clear Stream." The river's exceptionally pure water forms the backbone of their brewing, producing sake of remarkable clarity and finesse.
The "Niyodo-gawa" series is a celebration of this terroir, combining pristine water with carefully selected yeast strains and precise polishing ratios to express the full spectrum of Kochi's brewing artistry.

🏰 The Producer & Estates
Château Rayas, Pignan, Fonsalette, Château and Domaine des Tours are all fathered by the legendary Emmanuel Reynaud, unmistakably one of the finest wine producers of the Rhône. Utter "Rayas" to a certain crowd and they will swoon. Tucked away in the northern reaches of Châteauneuf-du-Pape, surrounded by pine forest, the estate produces wines of haunting perfume, pale colour and almost Burgundian delicacy, yet phenomenal persistence and ageability.
The approach is old-school simplicity: organic farming, whole-bunch fermentation with indigenous yeast, ageing in ancient oak with no new wood, minimal sulphur, and no modern technology. As Neal Martin wrote: "God invented wine to drink wines like this." Today, Emmanuel's sons Louis Damien and Benoît continue the family's legacy.
The Rayas story goes back to 1880, when Emmanuel's great-grandfather created the estate, originally dedicated to various crops. The property became solely focused on viticulture in the early 1900s. During the Second World War, the family acquired Château des Tours and Château de Fonsalette, each run by a different son. Emmanuel took over in 1997 after his uncle Jacques Reynaud, a bachelor with no direct descendants, passed away untimely.
Rayas: 10 hectares of vines on exclusively sandy soil, a key factor in its elegant, almost Burgundian style. Red: 100% Grenache. White: 50% Grenache Blanc, 50% Clairette.
Pignan: NOT Rayas' second wine, albeit commonly associated. A separate plot planted to 100% Grenache on much less sandy soils. Production accounts for 1/5 of the estate's total. The style is more classically Châteauneuf: broad-shouldered, intense and full.
Fonsalette: Various plots amassing 10 hectares in the Southern Rhône. Red: 50% Grenache, 35% Cinsault, 15% Syrah. White: 80% Grenache Blanc, 10% Clairette, 10% Marsanne. All wines are made at Château Rayas.
Château des Tours: Almost 40 hectares of vines in Vacqueyras. The Reynaud imprint is unmistakable, especially post-1997. The Vacqueyras remains most similar to Rayas/Fonsalette in its subtle, delicate texture. Also produces Côtes du Rhône red and white, Vin de Pays de Vaucluse red and white, and a rosé dubbed "Parisy."
La Pialade: Only made in certain vintages from declassified Rayas or Fonsalette parcels. An "everyday Rayas" of extreme rarity.
