Six wines that define California's place at the top table of world wine. From the Judgment of Paris veterans to a 25-year-old Stag's Leap S.L.V. and the near-impossible-to-find Heitz Martha's Vineyard.

🍷 Wines for Tasting (60ml+ per glass)

• Schramsberg Blanc de Blancs 2022

• Chateau Montelena Chardonnay 2023

• Ridge Geyserville 2021• Ridge Monte Bello 2018

• Stag's Leap Wine Cellars 'S.L.V.' Cabernet Sauvignon 2000

• Heitz Cellar Martha's Vineyard Cabernet Sauvignon 2016

🍇 About the Wines

- Chateau Montelena (Napa Valley)

The winery that shocked the world at the 1976 Judgment of Paris, where its Chardonnay beat the finest white Burgundies in a blind tasting. Decades later, it remains one of Napa's most iconic estates and a symbol of California's arrival on the global stage.

- Ridge Monte Bello (Santa Cruz Mountains)

Consistently ranked among the world's greatest Cabernet-based wines, Monte Bello comes from limestone vineyards at 400–800 metres elevation above Silicon Valley.

- Stag's Leap Wine Cellars S.L.V. (Napa Valley)

The other Judgment of Paris legend, the 1973 S.L.V. Cabernet Sauvignon defeated Bordeaux's finest First Growths. Tonight's 2000 vintage offers a rare chance to taste this icon with 25 years of bottle age.

- Heitz Cellar Martha's Vineyard (Napa Valley)

One of California's first single-vineyard Cabernet Sauvignons and arguably its most collectible. Known for its signature eucalyptus and mint character, Martha's Vineyard is allocated, scarce, and almost never poured at tastings.

Forget everything you know about cool-climate South African wine. Hosted by winemaker and educator Kyle Oosterberg, this tasting explores the legendary Hemel-en-Aarde Valley through six distinct expressions, from crisp coastal whites to earthy, spiced reds and single-vineyard Pinot Noir.

🍷 The Wines

• Newton Johnson, Albariño 2024 (Hemel-en-Aarde Valley, South Africa)

• Newton Johnson, Southend Chardonnay 2024 (Hemel-en-Aarde Valley, South Africa)

• Newton Johnson, Family Vineyards Chardonnay 2024 (Hemel-en-Aarde Valley, South Africa)

• Newton Johnson, Family Vineyards Falkirk Mourvèdre 2022 (Hemel-en-Aarde Valley, South Africa)

• Newton Johnson, Family Vineyards Pinot Noir 2023 (Hemel-en-Aarde Valley, South Africa)

• Newton Johnson, Single Vineyard Windansea Pinot Noir 2023 (Hemel-en-Aarde Valley, South Africa)

🏛️ About the Producer

Newton Johnson is one of South Africa's most celebrated cool-climate estates, situated in the Hemel-en-Aarde Valley, a narrow corridor just behind the Atlantic coast near Hermanus, in the Walker Bay region.

Founded in 1996 by Dave and Felicity Johnson, the estate is now driven by their sons Bevan and Gordon. The valley's name means "Heaven and Earth" in Afrikaans, and its clay-rich soils and maritime influence create ideal conditions for Burgundian varieties. Newton Johnson farms across multiple sites within the appellation, producing wines that range from vibrant coastal whites to structured, terroir-driven Pinot Noir.

Their single-vineyard Windansea bottling, from a steep, wind-battered slope of decomposed granite, represents the pinnacle of their range and showcases the extraordinary potential of South African Pinot Noir on the world stage.

Champagne Beyond Bubbles: From Blanc de Blancs to Bouzy Rouge

Date
Jul 25, 2026 2:00 PM
Venue
1/F, Spaces, 8 Queen's Road East, Wan Chai

This afternoon tasting opens six bottles that rewrite what "Champagne" really means. From pure Chardonnay Blanc de Blancs to a 20-year-old vintage, from a still Pinot Gris to a red from Bouzy with no bubbles at all.

Discover the breadth, depth, and quiet complexity that Champagne rarely gets credit for.

🥂 The Wines

• Franck Bonville 'Unisson' Blanc de Blancs Brut NV

• Laherte Frères Ultradition Extra Brut NV

• Laherte Frères Rosé de Meunier Extra Brut NV

• Dumangin J. Fils 'Le Vintage' Premier Cru Extra Brut 2004

• Drappier Coteaux Champenois 'Trop m'en Faut !' NV

• Domaine Jean Vesselle Coteaux Champenois Bouzy Rouge 2012

🏛️ About the Producers

Franck Bonville — A family estate in Avize and Oger on the Côte des Blancs, working exclusively with Grand Cru Chardonnay. Their Blanc de Blancs are mineral-driven, precise, and elegantly restrained.

Laherte Frères — A seventh-generation grower-producer in Chavot near Épernay, farming organically across multiple terroirs. Known for multi-varietal blends, single-vineyard cuvées, and minimal dosage — a reference point for modern grower Champagne.

Dumangin J. Fils — A Premier Cru house in Chigny-les-Roses on the Montagne de Reims, with a focus on vintage-dated Champagnes and extended lees aging. Their 2004 is a masterclass in what two decades of patience can reveal.

Drappier — A historic family house in Urville (Côte des Bar), renowned for Pinot Noir-based Champagnes. Also one of the rare producers of Coteaux Champenois — still wines from Champagne's vineyards that most drinkers never encounter.

Domaine Jean Vesselle — A grower in Bouzy, one of Champagne's most celebrated Grand Cru Pinot Noir villages. Their Bouzy Rouge is a benchmark for still red wine from the region — no bubbles, all structure and terroir.
