🏡 The Producers

Franck Bonville — A fourth-generation grower Champagne house based in Avize, farming 15 hectares of 100% Grand Cru Chardonnay across the Côte des Blancs. Known for mineral-driven precision, chalky freshness, and creamy texture from single-village bottlings.

Domaine De La Choupette — A family estate founded in 1992 by the Gutrin family in Santenay, spanning 13 hectares across the Côte de Beaune. Certified HVE 3 since 2022, their whites see around a year in oak with restrained new wood, delivering classic, terroir-focused Chardonnay.

Domaine Buisson Charles — A boutique 8-hectare estate in the heart of Meursault, now in its fifth generation under Patrick Essa and oenologist son Louis. No chaptalization, no bâtonnage, native yeast fermentations, and late harvesting for deep concentration. The 'Cuvée 1945' comes from a historic single parcel planted in 1945.

Patrick Javillier — One of Meursault's most respected names, built from two hectares post-war into an 11-hectare benchmark estate. Known for scientific precision, extended lees aging, and wines that consistently punch above their weight. Now run by daughter Marion and her husband Pierre-Emmanuel Lamy since Patrick's retirement after 2018.

🏛️ About the Producer

Château Latour, one of four original First Growths (1855 Classification) in Pauillac, is renowned for producing some of Bordeaux's most powerful, structured and age worthy wines. The Grand Vin is sourced exclusively from l'Enclos, a 47 hectare gravelly parcel of vines averaging 60 years old, dominated by Cabernet Sauvignon (~90%). Since 2012, the estate has withdrawn from en primeur, releasing wines only when deemed ready to drink.

Les Forts de Latour, first produced in 1966, is sourced from dedicated plots outside l'Enclos acquired specifically for this purpose. With a higher proportion of Merlot (25–30%) and aged in ~50% new oak, it offers remarkable depth and structure while being accessible sooner than the Grand Vin. The estate also produces a third wine, Pauillac de Latour.

• Charles Heidsieck Champagne Charlie 1985

🏛️ About Charles Heidsieck

Founded in 1851 by Charles-Camille Heidsieck, known as "Champagne Charlie" for his legendary charm and showmanship, the house has always been defined by generosity, depth, and an obsessive commitment to reserve wine ageing. Beneath the streets of Reims, Charles Heidsieck's cellars occupy ancient Gallo-Roman chalk crayères, providing the perfect conditions for extended ageing at constant temperature and humidity.

The house's philosophy centres on its reserve wine library, one of the largest and oldest in Champagne. Where most producers age reserve wines for two or three years, Charles Heidsieck routinely draws on stocks spanning decades. The result is a house style of rare richness, complexity, and vinous depth that sets it apart from its peers. Long recognised by critics and sommeliers as one of Champagne's most undervalued grandes maisons.

A Once-in-a-Lifetime Tribute to Giuseppe Rinaldi at LPM

Date
Sep 17, 2026 7:00 PM
Venue
La Petite Maison (LPM), 23-29 Stanley Street Shop 1, UG, H, Queen's, Central

Five historic wines from one of Barolo's most revered estates, spanning four celebrated vineyard sites.

Two decades of vintages from one of the most revered estates in all of Piedmont. This is a rare chance to taste and compare both of Giuseppe Rinaldi's legendary pre-2010 blends side by side across multiple vintages: Brunate-Le Coste in 2000 and 2005, Cannubi San Lorenzo-Ravera in 2003 and 2007, alongside a 1987 Barolo from an era when the estate bottled under a single label.

These vineyard combinations are no longer made, and finding even one bottle is a challenge. Having the opportunity to compare how each blend evolved across different years, at the same table, in the same evening, is something that may never happen again.

🍷  The Wines

• NV Frédéric Savart. L'Ouverture 1er Cru Blanc de Noirs Extra Brut
• 1987 Giuseppe Rinaldi Barolo
• 2000 Giuseppe Rinaldi Barolo Brunate-Le Coste
• 2003 Giuseppe Rinaldi Barolo Cannubi San Lorenzo-Ravera
• 2005 Giuseppe Rinaldi Barolo Brunate-Le Coste
• 2007 Giuseppe Rinaldi Barolo Cannubi San Lorenzo-Ravera

🏛️ About Giuseppe Rinaldi

One of the most revered names in all of Barolo. The late Beppe Rinaldi was a fiercely traditional winemaker whose wines from Brunate, Le Coste, Cannubi San Lorenzo and Ravera defined an era in Piedmont.

Before the 2010 labelling changes, the estate produced its celebrated Brunate-Le Coste and Cannubi San Lorenzo-Ravera blends. Following the regulations, Brunate became a single-vineyard bottling, while Le Coste, Cannubi San Lorenzo and Ravera were combined to create Barolo Tre Tine. The original blends are gone forever, increasingly scarce and highly sought after by collectors worldwide.

🏛️ About the Producer

Founded in 1949, Domaine Jacques Selosse was transformed in the 1980s when Anselme Selosse, trained at Burgundy's finest domaines including Coche-Dury, Leflaive and Comte Lafon, took over and brought a radical terroir-first philosophy to Champagne.

He introduced oak barrel fermentation, solera ageing, natural yeasts, biodynamic farming, and single-vineyard expression to a region built on blending and volume. Twice named "Vigneron de l'Année," Anselme is widely regarded as the godfather of Grower Champagne.

The estate farms just 8 hectares across 54 plots in Avize, Cramant, Oger, Le Mesnil-sur-Oger, Aÿ, Ambonnay and Mareuil-sur-Aÿ, producing only ~55,000 bottles annually. The Lieux-Dits collection, introduced in 2010, represents six single-vineyard cuvées showcasing each village's distinct terroir. Today, Guillaume Selosse continues his father's legacy, refining rather than reinventing.

🏛️ About Chateau Musar

Founded in 1930 by Gaston Hochar in Lebanon's Bekaa Valley, Chateau Musar is one of the most singular estates in the wine world. Inspired by Bordeaux yet entirely its own, the winery rose to international acclaim under Gaston's son Serge, who continued making wine throughout the Lebanese Civil War and famously introduced Musar at the 1979 Bristol Wine Fair. Michael Broadbent championed the wines, calling them "the greatest wine in the world that nobody's ever heard of," and in 1984 Serge became Decanter's first-ever Man of the Year.

The estate farms organically at elevations of 900 to 1,200 metres, working with Cabernet Sauvignon, Cinsault, Carignan and indigenous varieties like Obaideh and Merwah. Winemaking is minimal-intervention with indigenous yeast fermentation, and the flagship red is typically held for seven years before release. Still family-owned after more than ninety years, Chateau Musar remains Lebanon's most celebrated winery and proof that great wine is defined not by geography but by vision and conviction.

🏛️ About the MICHELIN Grape Selection

In July 2026, the MICHELIN Guide launched its inaugural Grape Selection in Burgundy, introducing a 1-to-3 "Grapes" rating system that evaluates entire wine estates rather than individual bottles or vintages. Of the approximately 3,500 producers across Burgundy, only 94 were recognised in the debut release, roughly 2.7% of the region's domaines covering the Côte de Nuits, Côte de Beaune, and Côte Chalonnaise.

Nine estates received the highest distinction of three grapes, the equivalent of three Michelin stars for restaurants. The evaluation criteria assess overall estate excellence based on agronomy and viticulture, winemaking technical mastery, identity, balance, and vintage-over-vintage consistency, focusing strictly on producer practices and terroir expression, independent of hospitality infrastructure.

Discovering Grower Champagne with Chef Emmanuel Soulière

Date
Sep 24, 2026 5:00 PM
Venue
Towngas Cooking Centre | 9/F, Lee Theatre, Causeway Bay

Great wine deserves great food and knowing how to choose both is an art in itself.

Join internationally acclaimed French Chef Emmanuel Soulière for an elegant journey into the world of Grower Champagne, discovering how terroir shapes flavour, and how the right pairing of champagne and canapé can elevate every sip.

🍾 The Tasting

• Three curated French canapés paired to perfection

• Three Grower Champagnes:

◦ Vincent Charlot

◦ Roland Champion

◦ Benoit Beaufort Rosé

• On-site champagne shopping available

🍇 About the Producers

- Vincent Charlot, Mardeuil, Champagne

A true terroir obsessive. Vincent farms 4.4 hectares across 39 tiny plots near Épernay, each vinified separately, yielding up to 27 cuvées a year (some as rare as 300 bottles). Certified organic and biodynamic since 2013, his vines are a biodiversity haven. Spontaneous fermentation in amphorae and old barrels, near zero sulphur, minimal dosage. Pure, precise champagnes that let the soil do the talking.

- Roland Champion, Chouilly Grand Cru, Côte des Blancs

A four generation family house founded in 1929, rooted in the chalky Grand Cru slopes of Chouilly, the heartland of great Chardonnay. Now in the hands of the fourth generation, with 14 hectares and 70% Chardonnay leading the blend, the house style is all about authenticity, finesse, and elegance.

- André Beaufort, Ambonnay Grand Cru & Polisy, Côte des Bar

A pioneer of organic Champagne since the 1970s, long before it was fashionable. The 6.5 hectare domaine is farmed entirely by natural methods: compost, homeopathy, and hand cultivated soils. In the cellar, indigenous yeasts, raw sugar tirage, and hand disgorgement à la volée. Some Vinothèque cuvées age over 30 years on the lees. Champagne of remarkable depth and unmistakable artisanal soul.
