Join winemaker Matsumura-san for a special evening celebrating one of Yoichi's rising stars. A Burgundy collector turned producer, Matsumura-san crafts his wines to the strictest standards without shortcuts.
Featuring mainly 2024 harvest releases, still produced in very small quantities paired with a bespoke menu from Ngau Steak Club.

🏛️ About the Vineyard
Misono Vineyard is a boutique estate in Yoichi, Hokkaido, founded in 2021 by Matsumura-san, a former Tokyo Burgundy wine bar owner who trained in viticulture at Nagano's Chikumagawa Wine Academy before securing land on the east-facing slopes overlooking Ishikari Bay and the Yoichi River.
The 15th licensed winery in Yoichi Town, the estate is planted on weathered volcanic gravel with exceptional drainage, farmed organically with no chemical pesticides and no-till cultivation. Inspired by Burgundian philosophy, Matsumura-san produces small-batch Pinot Noir, Chardonnay, Cabernet Franc and Kerner alongside distinctive Niagara cuvées from rare 50-year-old vines. Production remains extremely limited, making these among the most sought-after bottles emerging from Japan's new wave of fine wine.

Inspired by the spirit of Ping Shi (《瓶史》), where a fine vessel is seen not merely as a container but as something that nurtures the life and vitality of flowers, Shalom Ho will guide participants in creating their own floral arrangement using the artisan-crafted Prosperity Brass Vase. Through thoughtful techniques and the graceful proportions of shin, shou, and hikae, discover harmony, balance, and lasting beauty in every composition.
Alongside, Paul Yip will create an immersive soundscape using the TERRA synthesizer and spiritual electronic piano while a curated wine tasting selected by Finna Sze of Sotheby's Wine Hong Kong completes the sensory experience.

Shalom Ho — Ikebana
A Hong Kong floral artist rooted in the Japanese art of Ikebana. For her, flowers are a medium through which to explore the relationship between earth and humanity, the rhythms of impermanence, and the quiet wisdom of nature. In 2025, she received the First Grade Teacher Certificate in Sogetsu Ikebana.
Paul Yip — Sound
Founder and Artistic Director of IZEN, Paul is an internationally recognised sound artist who creates immersive sound journeys using meditative instruments, with performances at TEDx, Tsz Shan Monastery, and international arts festivals.
Finna Sze — Wine
Manager of Wine Retail & Private Sales at Sotheby's Wine Hong Kong. Holding the WSET Diploma and an MSc from the OIV, Finna brings a global perspective to fine wine through curated tasting experiences.
