Also known as Cujas or Prolongeau, Bouchalès is a rare, historic red grape variety native to the Bordeaux region. Once widely planted but nearly wiped out by phylloxera and changing tastes, it has been revived by a handful of passionate natural vignerons, offering a unique window into Bordeaux's forgotten past.


A rare opportunity to taste with Mr. Carlos de Carlos V, representative of Paul Hobbs Wines, on his visit to Hong Kong. Twice named Robert Parker's Wine Personality of the Year and dubbed "The Steve Jobs of Wine" by Forbes, Paul Hobbs is one of the world's most influential winemakers.

Paul Hobbs cut his teeth at Opus One and Simi Winery before launching his own label in 1991. A true globe trotter working across nine countries each year, he was among the first to recognise Argentina's high altitude potential, co-founding Viña Cobos in the Valle de Uco. He later expanded to France (Crozes-Hermitage, with Chapoutier) and Spain's Galicia (Alvaredos-Hobbs).

🏛️ About Maison Kressmann
Maison Kressmann is a historic Bordeaux wine merchant and producer founded in 1871 by Édouard Kressmann. Its flagship brand, Kressmann Monopole, launched in 1897, is one of the oldest branded Bordeaux wines still on the market today.
In 1930, the family acquired Château Latour-Martillac, a prestigious estate in Pessac-Léognan. The house also acts as ambassador and distributor for exclusive partner estates such as Château La Commanderie (Saint-Estèphe) and Château Langlet (Graves). Now part of the Thénot Group since 2007, Maison Kressmann continues to represent the art of Bordeaux blending and tradition.

🏡 The Producer
Cantine Pellegrino (est. 1880) Historic, family-owned winery in Marsala, western Sicily. Founded by local notary and wine grower Paolo Pellegrino and his son Carlo, now managed by the sixth and seventh generations.
One of only three original 19th-century founding families of the Marsala trade still operating today. Early expansion was shaped by Josephine Despagne, Carlo's wife from Sauternes, who brought French winemaking knowledge to the Sicilian estate.
The winery operates hundreds of acres across the Agro Trapanese region and on the volcanic island of Pantelleria, focusing primarily on indigenous Sicilian grape varieties. Known for their legendary Marsala, Passito di Pantelleria, and a modern range of dry table wines including Grillo, Nero d'Avola, and Frappato.
