🏛️ Spotlight on Henri Giraud
The Giraud-Hémart family has grown vines in Aÿ for 13 generations, with roots stretching back to 1625, and began producing wines under its own name in the 1950s. Henri Giraud combines this heritage with an experimental approach to winemaking, placing particular importance on oak from the Argonne forest. Carefully selected wood and individually tailored barrel toasting help shape the house’s distinctive style, while its commitment to forest restoration reflects a long-term vision extending far beyond the cellar.


This dinner at Mondrian Hong Kong welcomes Donnafugata, the visionary family owned Sicilian producer, for an evening that traces a journey across the island, from the volcanic slopes of Mount Etna to the wind swept island of Pantelleria. Each course is crafted by Carna's kitchen to complement the distinctive character of each wine.
At the centre of the evening is Mille e una Notte 2018, Donnafugata's iconic flagship red, offering profound complexity and velvety texture alongside the ultra premium Pardoo Wagyu M8-9. The finale: Ben Ryé 2022, the celebrated Pantellerian dessert wine made from sun dried Zibibbo grapes.

🏛️ Spotlight on Donnafugata
Donnafugata is a family winery with over 170 years of winemaking heritage in Sicily. Founded in 1983 by Giacomo Rallo and his wife Gabriella, though the family has been in the wine business since 1851, Donnafugata is credited with revolutionising Sicilian wine, proving the island could produce fresh, elegant, age worthy wines.
Now led by the fifth generation, José and Antonio Rallo, the estate spans 410 hectares across four remarkable sites: the hills of Contessa Entellina, the plains of Vittoria, the volcanic slopes of Etna, and the wind swept island of Pantelleria. The name "Donnafugata," meaning "the woman who fled," refers to Queen Maria Carolina of Naples, who took refuge in Sicily to escape Napoleon's forces.

🏛️ About Tenute San Fabiano
Tenute San Fabiano is a historic Tuscan estate owned by the noble Borghini Baldovinetti de' Bacci family, with roots dating back to 1452. Located just one kilometre from the Medici walls of Arezzo, the estate spans 950 hectares with over 300 hectares of DOCG vineyards across Chianti and Montepulciano. Sangiovese dominates at 75%, complemented by Merlot, Cabernet Sauvignon, Syrah, and Chardonnay. The estate's crown jewel, Armaiolo Grand Cru, is produced from the best Sangiovese and Cabernet Sauvignon grapes of the Campriano Estate in the Casentino hills. From post-war family farm to internationally recognised winery, Tenuta San Fabiano continues to honour centuries of Tuscan winemaking tradition.

- Vincent Charlot, Mardeuil, Champagne
A true terroir obsessive. Vincent farms 4.4 hectares across 39 tiny plots near Épernay, each vinified separately, yielding up to 27 cuvées a year (some as rare as 300 bottles). Certified organic and biodynamic since 2013, his vines are a biodiversity haven. Spontaneous fermentation in amphorae and old barrels, near zero sulphur, minimal dosage. Pure, precise champagnes that let the soil do the talking.

A four generation family house founded in 1929, rooted in the chalky Grand Cru slopes of Chouilly, the heartland of great Chardonnay. Now in the hands of the fourth generation, with 14 hectares and 70% Chardonnay leading the blend, the house style is all about authenticity, finesse, and elegance.

A pioneer of organic Champagne since the 1970s, long before it was fashionable. The 6.5 hectare domaine is farmed entirely by natural methods: compost, homeopathy, and hand cultivated soils. In the cellar, indigenous yeasts, raw sugar tirage, and hand disgorgement à la volée. Some Vinothèque cuvées age over 30 years on the lees. Champagne of remarkable depth and unmistakable artisanal soul.
