🏡 The Producers
Franck Bonville — A fourth-generation grower Champagne house based in Avize, farming 15 hectares of 100% Grand Cru Chardonnay across the Côte des Blancs. Known for mineral-driven precision, chalky freshness, and creamy texture from single-village bottlings.
Domaine De La Choupette — A family estate founded in 1992 by the Gutrin family in Santenay, spanning 13 hectares across the Côte de Beaune. Certified HVE 3 since 2022, their whites see around a year in oak with restrained new wood, delivering classic, terroir-focused Chardonnay.
Domaine Buisson Charles — A boutique 8-hectare estate in the heart of Meursault, now in its fifth generation under Patrick Essa and oenologist son Louis. No chaptalization, no bâtonnage, native yeast fermentations, and late harvesting for deep concentration. The 'Cuvée 1945' comes from a historic single parcel planted in 1945.
Patrick Javillier — One of Meursault's most respected names, built from two hectares post-war into an 11-hectare benchmark estate. Known for scientific precision, extended lees aging, and wines that consistently punch above their weight. Now run by daughter Marion and her husband Pierre-Emmanuel Lamy since Patrick's retirement after 2018.

For this masterclass at 67 on Hollywood, Arnaud Bardary MS walks through ten bottles that make those distinctions worth understanding. The tasting moves through whites from Bourgogne Blanc to Puligny-Montrachet, then reds from Bourgogne Rouge through to Gevrey-Chambertin. Along the way, expect a closer look at how appellation, site, vintage and producer shape the wines, and what you can actually taste in the glass when those variables change.
The lineup also features several domaines recognised in the Michelin Guide's new wine category, alongside bottles from producers including Anne Boisson, Sylvain Pataille, Henri Boillot, Jean-Marie Fourrier, Bachelet Monnot, Méo-Camuzet and Dugat-Py.
This is a masterclass designed to put Burgundy's hierarchy, diversity and sense of place into perspective. Ten wines at a time.

🏯 About the Producer:
Founded in 1712 in Okuizumo, Shimane Prefecture, Hikami Shuzo is a 300 year old brewery nestled in a land of ancient myth and tatara ironmaking. Drawing on pristine Hii River water and locally grown sake rice, they craft balanced, food friendly sake with gentle aroma, smooth umami, and a clean finish.
Their flagship label Nana Kanba, meaning 'Seven Crown Horse', is named after the legendary racehorse Symboli Rudolf, reflecting a family bond through marriage with the Symboli Stud Farm. The brewery also holds a quiet but remarkable distinction: it was here in the 1960s that Japan's first non foaming yeast strain was discovered, a breakthrough adopted by sake breweries nationwide.
