Domaine Didier Amiot | Burgundy, France
Rooted in more than five generations of family winegrowing in Morey-Saint-Denis, Domaine Didier Amiot was established in 2019 by Didier and his wife Hélène following the division of the family estate. Its approximately 3.3 hectares of Pinot Noir vineyards include Premier Cru holdings in Morey-Saint-Denis, Chambolle-Musigny and Gevrey-Chambertin, alongside Clos de la Roche Grand Cru. Working with consulting oenologist Pierre Millemann, the domaine focuses on expressing the individuality of its vineyard sites, with full organic certification achieved from the 2023 vintage featured in this tasting.

🍇 Meet the Producers
Ruggeri — Veneto
Founded in 1950 by Giustino Bisol and his cousin Luciano Ruggeri, this Valdobbiadene producer combines generations of local winemaking knowledge with an innovative approach to Prosecco. Long-standing relationships with growers and patient maturation are central to its philosophy, exploring the depth and ageing potential of the region’s sparkling wines. Giustino B., named in tribute to the founder, captures this pursuit of finesse and complexity.
Cadgal — Piedmont
Cadgal explores both the freshness and the ageing potential of Piedmont’s wines, with a particular focus on Moscato. Its old-vine bottling undergoes an unusual maturation process: bottles rest in sand-filled crates for five years, allowing greater complexity to develop. Alongside these aromatic sweet wines, Cadgal also produces dry whites, including Chardonnay—offering two contrasting sides of the producer in the evening’s selection.
Bruno Rocca — Piedmont
The Rocca family’s roots in Barbaresco stretch back to the nineteenth century, with the purchase of vineyards in Rabajà in 1958 marking a defining chapter. Bruno began bottling under the family name with the 1978 harvest, shifting the focus towards wines that express their individual vineyard origins. This commitment to place remains central to the estate, whose holdings include Currà in Neive, featured in the evening’s lineup.
Elio Altare — Piedmont
Based in La Morra, the Altare family estate combines its Piedmontese roots with an openness to experimentation. Inspired by his travels to Burgundy, Elio introduced changes in both vineyard and cellar, pursuing elegance, finesse and balance. La Villa reflects that approach: a blend of Barbera and Nebbiolo aged in French barriques, bringing together vibrant acidity, dark fruit and carefully balanced tannins.
Romano Dal Forno — Veneto
Producing wine since 1983, Romano Dal Forno’s estate in the Illasi Valley combines traditional local grape varieties with meticulous vineyard work and modern cellar techniques. Its focus on Valpolicella and Amarone reflects a determination to bring precision and depth to the region’s wines. Careful fruit selection and a willingness to innovate underpin an approach that respects tradition without being limited by it.
San Filippo — Tuscany
Set just outside Montalcino, San Filippo surrounds a historic Tuscan hamlet whose main farmhouse dates to 1672. Its Le Lucere Brunello comes from an east-facing vineyard and is made entirely from Sangiovese, with maturation in smaller oak vessels followed by larger casks. The estate’s emphasis on finesse, structure and silky tannins offers a distinctly Tuscan chapter in the evening’s journey across Italy.

A family-owned boutique estate in Rapaura, Marlborough, Riverby Estate occupies land farmed by descendants of the Matthews family for more than a century, with its first vines planted in 1989. Named after the Opawa River, the estate honours its riverside heritage with a rainbow trout on its labels.
Sustainable vineyard practices include using sheep for natural grass and weed control, while winemaking by Dr. John Forrest centres on fruit quality, with vintages skipped when grapes fall below the estate’s standards. Its diverse plantings support a range spanning Sauvignon Blanc and Chardonnay to Pinot Noir and Noble Riesling.


Join Trio Wine for an evening of tasting and discovery, exploring a selection that brings together rosé Champagne, Muscadet, Bourgogne Aligoté, Jura Savagnin, Pommard and Barolo. Compare the wines’ aromas, textures and styles, with vintages spanning 2018 to 2024, alongside a non-vintage rosé. Discover how each bottle interacts with the flavours of traditional Cantonese dishes throughout the meal.
The evening also marks a farewell to Hopers’ Base as it prepares to leave Hong Kong for London, an opportunity to celebrate its cooking while sharing discoveries around the table.

A family grower based in Mareuil-sur-Aÿ, combining biodynamically inspired vineyard practices with barrel ageing to express the character of each site.
Jean-Baptiste Hardy | Muscadet
After working at Domaine Roulot, Hardy returned to his family’s vineyards in Mouzillon, crafting single-site Muscadets that explore the texture and depth of Melon de Bourgogne.
Jean Lefort | Burgundy
Represented by Bourgogne Aligoté 2021, this selection offers a chance to discover Burgundy’s alternative white grape alongside Muscadet and Jura Savagnin.
Damien Courbet | Jura
Taking over his family’s domaine in 2011, Damien continues the estate’s winemaking traditions in Nevy-sur-Seille, close to Château-Chalon.

Founded by Luigi Arnulfo in 1873, this historic Bussia estate carries a longstanding Barolo heritage, continued by the Sartirano family since the late 1980s.
