🏯 About the Producer:
Founded in 1712 in Okuizumo, Shimane Prefecture, Hikami Shuzo is a 300 year old brewery nestled in a land of ancient myth and tatara ironmaking. Drawing on pristine Hii River water and locally grown sake rice, they craft balanced, food friendly sake with gentle aroma, smooth umami, and a clean finish.
Their flagship label Nana Kanba, meaning 'Seven Crown Horse', is named after the legendary racehorse Symboli Rudolf, reflecting a family bond through marriage with the Symboli Stud Farm. The brewery also holds a quiet but remarkable distinction: it was here in the 1960s that Japan's first non foaming yeast strain was discovered, a breakthrough adopted by sake breweries nationwide.

🏡 The Estate
Il Borro is a Tuscan story of history and revitalisation. Originally a castle in Val d'Arno di Sopra, it was transformed into a spectacular estate in the 16th century by Tuscan nobleman and general Alessandro dal Borro.
Today it is owned by the Ferragamo family, devoted to preserving this medieval heritage with the same meticulous craftsmanship found in their art of shoemaking.
Spread over 85 hectares of vineyards between 300 and 500 meters above sea level, the estate represents a perfect blend of hospitality and agricultural production. Every corner tells the story and essence of Tuscany. Certified organic since 2015, Il Borro is one of the forerunners of the Valdarno di Sopra DOC, re-established in 2017 to include local producers committed to organic winemaking. Through extensive research on terroirs, they select only the finest grapes to create wines of great depth and enduring satisfaction.


Four low-intervention wine suppliers, each pouring a selection of their current favourite bottles, open and ready for you to taste your way through. For HKD 450, you get a glass and access to every single pour in the room. That's 24 different wines, all worth your attention.
On the food side, Camp Krapao is taking over the kitchen, a Thai pop-up concept built specifically for drinking, doing a Nordic-meets-Thai thing with Venner that makes a lot more sense once you're eating it. Expect Sai Oua Buns and Isan Beef Tartare.

Domaine de La Choupette was founded in 1992 by brothers Jean Christophe and Philippe Gutrin in the heart of the Côte de Beaune. Spanning 13 hectares across Santenay, Chassagne Montrachet, and Puligny Montrachet, the vineyards are farmed naturally without chemical treatments, letting the terroir shine. Traditional Burgundian winemaking meets modern precision to produce exceptional Pinot Noir and Chardonnay at approachable prices.
